High in Protein and Taste!

I've recently been trying out lots of high nutrition, easy on the belly recipes.  Here's one of my new favorites - a 16 bean soup that's full of protein and veggies, high on taste but mild enough to get down on a nauseous day, and very easy on the body.

16 Bean Soup

1 bag 16 bean soup mix (you can find this with the rice usually)
1 onion, diced
1 green pepper, diced
1 carrot, diced
1 can diced tomatoes
2 strips bacon, uncooked and cut into pieces
Water
Chicken bullion (either 2 cubes or 2 T)
1.5 T salt
1 T pepper
1 T celery salt (or you can use 3 stalks worth of sauteed celery chunks)
1.5 T garlic powder
1 T basil

(T = Tablespoon. Spice measurements are approximate since I cook by taste. Feel free to play with how much you put in - you can always add more water if it gets too tangy)


1. Soak beans as described on package, then drain and rinse
2. Sautee onion, pepper, and carrot in the bottom of soup pot
3. Add soaked beans to the sauteed veggies, cover with 2" water, and add in all other ingredients.
4. Bring to a boil and simmer covered, with lid cracked, for 1-1.5 hours on low until beans reach desired tenderness.
5. For extra yumminess, serve a piping hot bowl topped with bacon crumbles!
