Roasted Veggies! (Crohn's)

I actually have Crohn's and SEVERE gastroparesis, which is really super fun. For awhile I had a lot of trouble keeping food down because it would take SO LONG to leave my stomach. These veggies were one of the only things I could eat, plus they're massive amounts of yum.

Ingredients:
1 bag of baby carrots (you could also peel and cut up a couple potatoes, I use cauliflower a lot too. It really just depends on what you want)
2 Tbsp Olive Oil
1 packet of Good Seasonings Dry Italian Dressing mix (I prefer zesty because it has more flavor. I haven't had a problem with it being too peppery or anything, either.)

Super easy. Put the carrots in a bag or bowl, add olive oil and seasonings, toss until the veggies are coated. Put them in a 350 degree oven (sorry for those not in the US! I'm really bad at conversions...) on a roasting pan, or cookie sheet. Cook for 20 minutes and check. At this point I give them a little stir, see how tender they are. I usually cook them for another 20 so they get really soft. Also, when I'm just doing carrots, I'll let them get slightly brown. It makes them a little sweeter.

If you want to add potatoes or cauliflower, or even broccoli (I don't like it. Texture thing) just use half the carrots. If you're making a HUGE amount, add more oil and another packet of seasoning.

You can also use Onion Soup mix or the mixed Italian seasonings that are with the spices. Now I'm hungry!

I feel for you, I have issues with gastroparesis too.
The only thing that doesn't bother my stomach (usually) is one of those nutritional meal replacements in a bottle/can like Ensure.
Needless to say, I drink a lot of "chocolate" nowadays ^_^

The veg look awesome!

I was on liquids for three months last year. I know exactly which Slim Fast are the best! Don't drink the Cappuccino ones! Chocolate is definitely the best!

Hehe, I think chocolate on the whole for any meal replacement is the least of all evils -- though for Ensure, the butter pecan was not too shabby for a change of pace, but chocolate was about the only one you could drink day in and day out and not feel too disgusted in the end ^_^

I also have Crohn's Disease! So I know what you go through, through I'm not sure what gastroparesis is. Mine is pretty bad too, as it likes to create immunity or deny medications, but I get along anyhow ^_^ Even though this recipe is simple, it sounds delicious!! A good thing for when I'm not feeling well.

The carrots are AMAZING. I make them all the time.

Gastroparesis is the technical name for "my stomach doesn't empty". I guess it's just defective somehow. Food sits in there for HOURS until it finally goes through or I throw up.

Yeah, my Crohn's doesn't seem to want to respond to meds either. Sometimes it does, sometimes it doesn't. It makes me want to bang my head into a wall!

We should be friends and talk more about this. I think they like us to keep it to food topics here. Dunno is that counts in the comments, though....

Aww, I'm so sorry you have to deal with TWO digestive illnesses! My main thing is Crohn's, though I do have really light acid reflux.. though I know that's pretty much nothing ^_^ I friended you back so we can talk away all we want!! Hope to chat with you soon!
