IBS safe dairy free spicy clam chowder

Dairy free, spicy, New England Clam Chowder

So, without further ado, you will need:

+ 1 tbsp olive oil
+ 1-2 stalks celery, chopped
+ handful of mushrooms (Yes, I like mushrooms. Get over it.)
+ 1/2 cup flour
+ 2 cups (ie, two bottles) clam juice
+ 2-3 cups soymilk (I used more to make up for the lack of the second cup of clam juice)
+ 2 6.5 oz cans minced clams, drained
+ 1 bay leaf
+ 1/2 tsp white pepper
+ 3/4 tsp salt
+ 1/4 tsp black pepper
+ dried parsley
+ potatoes if you're a normal person, about two, diced.

Traditionally, you serve clam chowder with saltines or oyster crackers.

I say, fie on tradition! Serve it with ginormous slices of Italian bread, because it is really, really awesome to dip the bread in the soup, especially if you get it nice and thick (ie, you cheat and use more flour).
